Two Kind of Odd But Easy Dishes
I really need to go shopping but am too lazy to do so right now, so I've been "making do". That also helps clear out items that would otherwise go to waste, so not so bad. Anyhow, making do often forces you to a bit of creativity. Without further ado:
Greek Yogurt, Dried Fruit, Dried Ginger and Honey: Ordinarily I put some jam in my yogurt, but I had some dried fruit (cherries and apricots). I cut them up fairly fine using kitchen shears and a knife. Mix 1/2 cup yogurt, the fruit, 1 teaspoon of dried ginger and about a tablespoon of honey. The very different textures of yogurt and dried fruit work quite nicely and the honey and ginger add some sweetness and kick that complements the fruit nicely. I'm sure this would work with lots of other dried fruit, e.g., figs, raisins, etc., just pick whichever ones would go together, cut, mix and go.
Hot PBJ: The peanut butter was a little hard so I figured some heat would soften it. True, but this works even better with PB that hasn't gone south. For no particularly good reason (well lack of counter space) I don't own a toaster so that wasn't an option. Melt a bit of butter in the bottom of a frying pan (maybe a teaspoon at the most, you don't need much). Put two pieces of bread in the bottom of the pan and spread J on one piece and PB on the other. Allow this to warm up until you get the J starting to melt, put both pieces together, and enjoy. The jam really tastes much more strongly when warmed as compared to how it usually is coming out of the refrigerator, and that little bit of butter and browning of the bread is a nice addition.
