Really Easy Desserts
I'm really NOT known for dessert. I don't have much of a sweet tooth, don't bake, rarely get dessert when I eat out. But I've found a few nice and easy ones:
(1) Frozen fruit, e.g., raspberries, blueberries, mixed fruit, etc. Make sure they are bite sized. Allow to soften slightly and release a little juice, but are still frozen. + (2) Reddi-wip, which you mix up with the frozen fruit. The Reddi-wip mixes with the juice from the fruit and freezes, blending things together so you end up with a whole being greater than the sum of the parts. This makes a nice, relatively low calorie dessert, too, as even regular Reddi-Wip is only 25 calories per serving (but you'll need probably three equivalent per person) and frozen fruit no more than about 80 calories per serving, so easily 150 calories, as compared to ice cream at 300, and it only goes up from there....
(2) Ice cream with additives. This one isn't low calorie, but it's pretty good and also easy. (Invented by my friend Peter, who has a way with such things.) Yeah, everybody puts toppings on ice cream, but these are very subtle but have a big effect, where loads of chocolate syrup change the underlying ice cream too much. Some combinations: Chocolate with a dusting of ground cinnamon and clove. Be sparing with the spice, as the goal is to enhance the chocolate, not overwhelm it. Vanilla (or strawberry) with fresh lemon (or lime) juice. This is best with premium ice cream (duh) but can even make ordinary grocery store ice cream quite a bit better.
