Leftover Rice

I know that I am a horrible judge of quantities of certain foods, and rice is one of them. Unless I'm really careful, I tend to make far too much of it. As a result, I was curious as to how the discussion went.

The surprising thing to me was the number of people who said that they got good results from using the microwave to reheat rice. Usually, they added a bit of water first and covered it. Other bits of wisdom:

  • Freeze your leftover rice in single-portion bags. This can easily be reheated in the microwave.
  • Don't refrigerate your rice unless you plan on using it to make fried rice.
  • Microwave alternative: Put your rice in a strainer or colander, breaking up any clusters of rice. Pour boiling water over the rice.

Personally, I like to use leftover rice as an excuse to make rice pudding. I just toss it with some milk, egg, sugar, and whatever flavoring I want (vanilla, amaretto, cinnamon, etc... I've even made chocolate rice pudding) and cook.
