Am a longtime resident of Champaign who departed a few years back for the joys of the NYC metro area. Some may know me (or not). Email if you want details.

I like the general "hacker" approach though I think I've gotten a bit more into technique over the last few years, particularly ever since watching a lot of Alton Brown starting in '07. (I have seen nearly every episode since then.) Reasonable talent in the kitchen---which I have---only goes so far and AB convinced me to up my game. One of these years, I'd like to take cooking classes to learn how to do things the "right" way, but that's a long way off.
