Healthy Breakfast

I've been trying to eat earlier in the day compared to my usual habits, which means consistently eating breakfast. (Coffee is non-negotiable, regardless of whether it's healthy or not.)
There are a number of classics that are good, of course, but they tend to be really high calorie and a bit of a pain to cook. Here seems to be my best relatively low-cal, high fiber, easy to prepare breakfast:
Old-fashioned oats (or some kind of multigrain cereal), 1/2 to 3/4 cup
twice as much boiling water as you have cereal
1/4 cup dried apricots
1 tbsp walnut oil
pinch of salt
1 tbsp Chinese five spice
Put boiling water on the ingredients, lid and put on very low. It's done in about five minutes.

Surprise, Surprise!
I didn't know chinese five spice powder can be used for oatmeal! Obviously this is one healthy simple to make breakfast treat, but since I haven't tried using the spice for oats, I am left clueless until I make this for myself. And i definitely would. Tomorrow morning after getting a bag of dried apricots from the supermarket.

Sure, why not? It's got plenty of flavors that fit great in, say, oatmeal raisin cookies.
