Corn Syrup Substitute

Over on eGullet, there is a thread about corn syrup substitutions. A lot of people are trying to cut back on the use of corn syrup, so this seemed like a good thing to research.

On the eGullet thread, agave nectar is a popular choice. Agave nectar isn't something that most people have lying around, though, and it isn't as dirt-cheap as corn syrup.

Is there another option?

Sure.

This recipe appears popular on the Internet:

    2 c. white sugar
    3/4 c. water
    1/4 tsp. cream of tartar
    Dash of salt

    Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.

    Cool syrup and store in a covered container at room temperature. It will keep for about 2 months. Makes almost 2 cups.

I'm honestly not sure what makes this any better for use as a corn syrup substitute than simple syrup (essentially the same thing, but with just sugar and water) would be. If anyone knows, please leave a comment.

If you want to emulate dark corn syrup, just add some molasses.
