Nuts burn VERY easily and they taste nasty when burned. Usually I'd put a bit of oil in the pan or else use the oven but I wanted the pecans I bought today dry and didn't want to use the oven. Set the pan on a very low flame and make sure the nuts are evenly distributed. Stir them once in a while to redistribute. The fact that the pan is so massive and doesn't have a notable hotspot is perfect.

I don't have a waffle iron or sandwich press and don't really intend to get either anytime soon. I used to have a Foreman grill, which presses reasonably well, but I never liked it for anything else and lack the counter space. However I decided to make an approximate Cuban sandwich (with a bottle of beer) for dinner, which requires approximating a sandwich press. Here's my attempt. This might be totally obvious to others, I don't know, but it had never occurred to me.

I made dinner last night and it came out really well. Nothing remarkable, just two whole chicken breasts (one for later :), some red potatoes and onions. Fennel and cucumbers in vinaigrette were a side dish.

This is tricky. My friends from Poland has friends from the old country in last night so I volunteered to make something very American and of course chose the ribeye. (It was Independence Day!) Well it turns out that in Poland everybody eats their meat well done. I think well done on a perfectly good steak is somewhat of a crime but if that's what people want, that's what I'll do. I didn't want my steak like that, which is always a little tricky. This required some mental tap dancing to get right. So here's how I did it.

Having moved a few years back I had to "re-kitchen". This was because I got rid of nearly everything I owned and bought anew as I was moving across the country. No real loss in most cases and actually I think it might be something worth doing a little more often because I rethought a lot of things I owned. One of the items I got---having been convinced by Alton Brown that it was a good idea---is a Lodge cast iron skillet.
